Marinata lor se numeste 'à l’escabèche' si este o marinata facuta cu un amestec din otet si ulei.

Mi-a placut foarte mult, nu mancasem inca vinete in otet, sunt minunate mai ales ca am folosit vinete proaspete si tinere.
Voi reface caci este o garnitura ideala. Data viitoare voi pune mai putina apa (doar 350 ml) si mai putin otet (300 ml) si le voi gati 20 de minute maximum (am gatit 25 -30 de minute).

Ingrediente:
pentru 5 borcane de de 350 - 375 ml
700 gr de vinete
4 catei de usturoi tocati fin
4 foi de dafin
1 ceapa rosie
sare marina
piper
patrunjel proaspat
2 morcovi rasi
2 aedel taiat lamele
otel alb - 350 ml
apa( am pus in jur de 450 ml)
ulei 4-5 linguri
piment sau boia de ardzi
origano uscat
Mod de preparare:
Curatati vinetele de coaja, daca sunt de gradina lasati coaja, eu am lasat-o.
Taiati-le rondele de 0,5-1 cm grosime si rondelele mari le-am taiat apoi in 2.
Presarati-le cu sare marina si lasati-le 15-30 de minute pe o placa sau intr-o sita. Spalati-le apoi rapid de sare.
Am sarit aceasta etapa necesara daca vinetele sunt eventual amare, ale mele erau mici, tinere si albe.
Taiati ceapa rondele si ardeiul in lamele.
Intr-o oala adanca, puneti un pic de ulei pe fund. Asezati un strat de vinete, deasupra puneti morcovi dati pe razatoarea cea mare, rondele ce ceapa, lamele de ardei, 1 foie de dafin ,origano uscat si piment.

Arozati cu un pic de ulei si o parte din otet.
Presarati un pic de sare si dati un tur de piper.
Repetati procedura; vinete, morcovi, ceapa, ardei, foaie de dafn, ulei, otetetc pana terminati ingredientele.

Completati cu apa. Aduceti la fierbere, acoperiti si gatiti 20-25 de minute.
Lasati sa se raceasca complet. Se serveste rece.
Le puteti conserva 2 saptamani la frigider sau le puteti pune fierbienti in borcane si steriliza pentru iarna .

Eu am pus compozitia fierbinte in borcanele sterilizate, le-am inchis bine si pus cu fundul in jos.
Le-am accoperit cu o patura si lasat astfel o noapte.
A 2a zi le-am intors si le-am pus in camara/beci.
Le verific in mod regulat, daca borccanul nu este inchis bine se va vedea la suprafata, luati-l puneti-l la rece si consumati-l repede.
