Aluat Tangzhong :
63 ml de apa
63 ml de lapte
25 g de faina
Briosa :
270 g de faina
28 g de lapte
25 g de unt
43 g de zahar
4 g de sare
5 g de lapte praf
6,5 g de drojdie uscata
30 g de smantana
43 g de ou batut
93 g de aluat tangzhong
ou batut pentru uns, zahar perlat pentru decor
Mod de preparare:
Aluat Tangzhong :
Amestecati cu un tel intr-o oala pe foc mic apa, laptele si faina.
Amestecati pana se-ngroasa si obtineti un sos béchamel .
Filmati la suprafata si lasati sa se raceasca.
Briosa :
Intr-un castron sau in bolul robotuui puneti toate ingredientele in afara de unt. Framantati 5 minute, adaugati untul in bucati si framantati inca 5 minute. Dublati timpul de framantat daca framantati cu mana.
Acoperiti si lasati sa creasca 1 ora.
Degazati aluatul si impartiti-l in 3.
Intindeti fiecare bucata cu un rulou in dreptunghi. Pliati spre centru marginile si rulati.
Veti obtine 3 rulouri.
