Trufele sunt ciuperci comestibile clasa ascomycete din familia Tuberaceae, genul Tuber. Datorită dificultății în găsirea lor sunt numite și „diamantele pământului”, fiind foarte scumpe.Am avut sansa de a primi o trufă neagra un Tuber melanosporum din regiunea Aveyron- Franța.

Trufele negre sunt culese in ianuarie si februarie cand sunt in plina maturitate.
Sunt sterilizate imediat dupa culegere intr-un borcan iar sucul lor poate fi folosit.
Am utilizat-o pentru a face o 'fritata' - un fel de omleta italiana in care am adaugat sparanghel verde si rosii confiate.
O reteta simpla si eficace, trufele sunt asociate foarte des cu ouale si omleta.

Ingrediente: 1-2 persoane
3 oua
6 fire de sparanghel verde
1 ceapa salota
cateva lamele de trufa neagra
6 fire de sparanghel verde
1 ceapa salota

1 lingura de suc de trufa neagra
2 linguri ulei de masline
2-3 felii de rosii confiate
lapte
sare, piper
Mod de preparare:
Curatati sparanghelul cu un cutit econom (lasati varful) si taiati baza.
Fierbeti-l 5-8 minute in apa fierbinte cu sare (depinde de grosimea lor).
Taiati ceapa salota marunt si reveniti-o
in uleiul incins intr-o tigaie mica.
Bateti bine ouale cu un pic de lapte, adaugati sare si piper.
Adaugati lamelele si sucul de de trufa.
In tigaia unde a-ti revenit ceapa puneti peste ceapa sparanghelul scurs si taiat in 2 si rosiile confiate taiate bucatele.
Adaugati deasupra ouale.

Puneti la cuptorul incins la 180°C sub gril 10 minute, intorcand-o dupa 5 minute.
O puteti face de asemenea pe foc.
