Sunt sterilizate imediat dupa culegere intr-un borcan iar sucul lor poate fi folosit.
Am utilisat-o pentru a face o 'fritata' - un fel de omleta italiana in care am adaugat sparanghel verde si rosii confiate.

1 lingura de suc de trufa neagra
cateva picaturi de ulei trufat
Mod de preparare :
Am ales o carne de rata tip piept-muschiulet fara piele si grasime, taiata fileuri subtiri si deja marinata.
O puteti marina si pregati acasa. Va trebuie 1 lingura de miere, 2 linguri de otet balsamic, 1 lingura ulei, 1 lingura amestec 5 piperuri si 1 lingura sos soia.
Preparati marinada, ungeti fileurile cu marinada , filmati si dati la rece.
Intre timp spalati si curatati cartofii.
Taiati-i bucatele si puneti-i la fiert in apa cu sare.

Intr-o tigaie reveniti carnea pe ambele parti intr-un pic de unt.
Puneti marinada ramasa deasupra si dati la cuptor timp de 7 minute pe fiecare parte. Gatiti-o dupa gustul dvs.

Scurgeti cartofii, puneti untul si presati-i in piureu.
Varsati laptele fierbine si amestecati bine (la robot ).
Puneti lamelele si sucul de trufa, sare, piper si cateva picaturi de ulei trufat.
