A fost realizat initial pentu a acompania carnea vinata, apoi a fost folosit la carnea alba : pui, curcan, iepure si la carnea de vitel.

Spalati si curatati legumele.
Taiati prazul, morcovii si ceapa in bucati.
Intr-o oala adanca sau sub presiune sotati legumele intr-un pic de unt- 20 g.

Scoateti si rezervati. Puneti carnea la prajit, colorati-o pe toate partile. Condimentati : sare, piper si adaugati legumele .
Amestecati, reveniti cateva minute, adaugati vinul alb, foile de dafin si cimbrul uscat. Acoperiti carnea cu apa fiarta, sarati , acoperiti si lasati sa fiarba la foc potrivit 1 ora (40 de minute la oala sub presiune).

Spalati si curatati cupercile. Taiati-le felii.
Curatati si tocati marunt ceapa salota.
Sotati ceapa in 20 g de unt, adaugati ciupercile taiate si reveniti impreuna 2 minute. Adaugati vinul alb si lasati sa fiarba si se evaporeze. Rezervati.
Scoateti carnea si legumele, filtrati zeama.
